I first saw this recipe on the Pit Barrel Cooker website and it instantly caught my eye. The only reason I didn’t cook it on the Pit Barrel, was because it was underway smoking other foods. The MAK 2 Star General had to report for duty. Everything including the cake was cooked on the pellet grill.
Cook Details:
- 2 lbs ground breakfast sausage
- 1 box Krusteaz Cinnamon Crumb Cake (only 1/4 of finished cake will be used per 1 lb of sausage)
- 1 tbsp. of your favorite rub
- 1/4 cup of maple syrup & more for serving
- MAK 2 Star General upper rack
- Lumber Jack wood pellets
- Baked cake for 45 minutes at 350F. Followed directions on box.
- Crumbled cake and built fatty’s
- Cooked fatty for 35 minutes at 300F
Make the Cinnamon Crumb Cake
You first have to start by baking the cinnamon crumb cake. Follow the directions on the box to prepare the cake as it wants you to layer the batter and cinnamon in the pan. We cooked the cake on our MAK 2 Star pellet grill upper rack at 350F for 45 minutes. The cake turned out great with a light smoky flavor. Actually, I had to slap everyone's hands away from the pan as they were about to eat all the cake.
The cake looked great coming off the pellet grill. The recipe calls for 1/4 of the cake to be crumbled in 1 lb of breakfast sausage. We had guests at the house, so we doubled the sausage to 2 lbs and used 1/2 of the cake. After the cake comes off the cooker, you need to let it cool down. Once it cools, you can crumble it up to place inside the sausage.
Making the Breakfast Sausage Fatty
Roll out the breakfast sausage on some clear plastic wrap. This will make it easier to roll the sausage after you lay out the crumb cake. Once you spread the cake out, the next step is to pour some maple syrup over the crumb cake. This will give you that sweet maple center. Next, lift the plastic wrap and roll the sausage into a cylinder. Pinch the meat together at the top and on the ends to fully enclose the crumb cake. Now it’s time to go on the pellet grill.
Crumb Cake Breakfast Fatty on Upper Rack
We placed two breakfast fatty’s on the upper rack of the MAK 2 Star pellet grill with the controller set to 300F. I inserted the temp probe from the MAK Pellet Boss controller and set the alarm to around 160F. About 35 minutes later I hear the loud beeping and it's ready to come off the pit.
Here is what the fatty’s look like 35 minutes later. Not too bad for our first time with this recipe. Can’t wait to get this inside and cut it up!
Sliced up Cinnamon Crumb Breakfast Fatty
The breakfast fatty was a huge success. The flavor was awesome and the texture was even better. Sweet and salty go so well together and this recipe pulls that off with flying colors. Many of our guests said it reminded them of a McGriddle from McDonald's. I’ll take that.
The final product is cinnamon sausage wonderland. The outside is a seasoned breakfast sausage with a bit of a garlic bite while the inside is cinnamon maple cake. I don’t think everyone in the house was expecting this to be as good as it was. After cutting up the sausage roll, everyone was in the kitchen waiting their turn to try this peculiar recipe. Needless to say, it was a huge success and the MAK 2 Star General performed flawless once again.
