Salami Chips Cooked on MAK 2 Star Pellet Grill

You can cook them on your outdoor grill for a little added smoky flavor or bake them in your indoor oven. Either way, they are an awesome snack that goes with many types of dip and the flavor is great. Once you cook them, you will wonder why you haven’t done this sooner.
The Cook
- Italian dry salami slices, or any other Italian cuts
- Foil lined large cookie sheet
- MAK 2 Star Pellet grill at 325F
- Bottom rack for 12 min
- Go more or less time depending on if you want chewy or crispy
- Lumber Jack wood pellets
Lay Out Salami Slices on Foiled Cookie Sheet
You can use any good Italian dry salami slices for this cook. Buying pre-sliced salami will make this much easier as you wont have to spend hours cutting meat in preparation. We purchased some bulk packs of salami and laid them out on a large cookie sheet. We foil lined the cookie sheet to keep things clean and due to their fat content, we did not have any issues with the salami sticking.
Top or Bottom Rack of Pellet Grill
You can cook on the top or bottom rack of your pellet grill. Keep in mind the bottom will cook faster because it is closer to the heat source. How long you cook the salami will be completely up to you. We have a general guideline to start with but you can get different results depending on how long you cook the salami.
We cooked a batch that came off the grill completely black and we thought we burned the whole batch. They actually turned out great and had a crispy, chip like crunch. Our guests actually preferred them over the batch that was cooked less.
If you want more of a chew to the salami, take them off when the edges start to blacken. This will provide the traditional chew of salami with some crispy edges and smoke flavor from the wood pellets. Go longer if you want a crispy chip or take them off sooner if you prefer a little chew. Pretty simple.
Pineapple Mango Jalapeño Cream Cheese Dip
We made a very simple dip for the salami chips. You can use standard cream cheese and spread it over the salami chip which is delicious. If you would like to add more texture and flavor, you can add a sauce. We used a pineapple mango jalapeño salsa and mixed it with the cream cheese to add some sweet and spice. This provided texture from chunks of pineapple along with spice from the jalapeños. The end result was great.
